It’s the honey for people who actually want to taste their honey.

Sourced from the unassuming inkberry holly bush, Gallberry honey brings a complex, low-register sweetness to the table. It features a unique, clean finish with a faint hint of bitterness making it the ultimate secret weapon for your kitchen.Whisk it into a homemade apple cider vinaigrette to balance the sharp acid. Or drizzle it over a block of salty feta or a sharp, aged cheddar

Bright, fruit, woody.

Frequently asked questions

My honey crystallized — is it still good?

Yes! Crystallization is a natural sign of pure, raw honey. To return it to liquid, place the jar in warm (not boiling) water. Never microwave it — that destroys the enzymes that make raw honey special.

What does "never heat treated" actually mean?

Most commercial honey is pasteurized at high temperatures. We never heat our honey above hive temperature, so the pollen, propolis and natural enzymes stay intact — along with the flavor.

Is raw honey safe for everyone?

Raw honey is safe for adults and children over 12 months. Like all honey, it should never be given to infants under one year old.

Will it ship safely in the Florida heat?

Absolutely. Honey is shelf-stable and ships beautifully. Each jar is wrapped and packed in St. Augustine.
