Lavender Infused Honey Scones

Scone Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 tablespoon dried culinary lavender buds
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 1/2 cup milk (whole milk or 2% works best)
  • 1/4 cup Honey Truck Lavender Infused Honey
  • 1 teaspoon vanilla extract
  • 1 large egg

Glaze Ingredients

  • 1 cup powdered sugar
  • 2 tablespoons honey
  • 1-2 tablespoons milk (adjust for desired consistency)
  • Optional: a few lavender buds for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and sugar. Stir in the dried lavender buds.
  3. Cut in the Butter: Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Combine Wet Ingredients: In a separate bowl, whisk together the milk, honey, vanilla extract, and egg until well combined.
  5. Form the Dough: Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir gently with a fork or wooden spoon until the dough just comes together. Be careful not to overmix.
  6. Shape the Scones: Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat the dough into a 1-inch thick round. Use a sharp knife or a pastry cutter to cut the dough into 8 wedges.
  7. Bake: Place the wedges onto the prepared baking sheet, spacing them apart. Bake for 15-18 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and let cool on a wire rack.
  8. Prepare the Glaze: In a small bowl, whisk together the powdered sugar, honey, and milk until smooth. Adjust the consistency by adding more milk if needed.
  9. Glaze the Scones: Once the scones are slightly cooled, drizzle the honey glaze over the top. If desired, sprinkle a few lavender buds on top for garnish.
  10. Serve: Enjoy your lavender honey scones warm or at room temperature, ideally with a cup of tea.
