Healthy Homemade Vanilla Honey Granola



  1. Pre-heat oven to 300 degrees and move the center rack up a level so it's on the second level/rack from the top. Line a rimmed baking sheet with parchment paper.
  2. In a large bowl, whisk together coconut oil, vanilla, honey and salt. Add your oats and sliced almonds and fold the mixture together. Use a spatula to help pour the granola onto your parchment-paper lined baking pan.
  3. Bake for 20 minutes, rotate the pan (180 degrees) for even toasting, then bake for an additional 10-15 minutes or until golden and crispy.

NOTE: If you want chunky clusters, DON'T stir at the halfway mark. Once it's done cooking, let cool completely. This helps give it that extra crunch.
