Barrel-Aged Bourbon Honey Ice Cream

Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup Honey Truck Barrel-Aged Bourbon Honey + more for drizzle
  • 5 large egg yolks
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Prepare the Base: In a medium saucepan, combine the heavy cream, whole milk, and a pinch of salt. Heat over medium heat until it just begins to simmer. Do not let it boil.
  2. Mix the Egg Yolks: In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture becomes pale and thick.
  3. Temper the Eggs: Slowly pour about 1 cup of the hot cream mixture into the egg yolks, whisking constantly to temper the eggs. This prevents them from curdling.
  4. Combine and Cook: Pour the tempered egg mixture back into the saucepan with the remaining cream mixture. Cook over low heat, stirring constantly with a wooden spoon or spatula, until the mixture thickens enough to coat the back of the spoon (about 170-175°F, or 77-80°C). Do not let it boil.
  5. Add the Honey and Vanilla: Remove the saucepan from the heat and stir in the barrel-aged bourbon honey and vanilla extract until fully incorporated.

  6. Chill the Mixture: Pour the mixture through a fine-mesh sieve into a clean bowl to remove any cooked egg bits. Allow it to cool to room temperature, then cover and refrigerate for at least 4 hours, or overnight for best results.

  7. Churn the Ice Cream: Once the mixture is thoroughly chilled, pour it into your ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes.

  8. Freeze the Ice Cream: Transfer the churned ice cream to an airtight container. Press a piece of plastic wrap directly onto the surface of the ice cream to prevent ice crystals from forming. Seal with the lid and freeze for at least 4 hours, or until firm.

  9. Serve: Scoop and serve the ice cream. Enjoy it on its own or drizzle with extra Barrel Aged Bourbon Honey.
